Fried Zucchini

So my best friend Karlie gave me this recipe and I had to share it with everyone! Delicious!!!!
I was lucky because we had fresh garden zucchini too! ( thanks mom!)

One large zucchini

3 eggs

1 cup Italian bread crumbs

4-5 Tb. Olive Oil

-Slice Zucchini half inch thick or thinner slices

-Have a bowl ready with eggs whipped together

-Have a plate ready with bread crumbs spread around

-Heat pan with 4-5 Tb. Olive Oil get olive oil pretty hot

-Dip zucchini slice in egg then bread crumbs both sides, then put in the hot pan. Let the zucchini brown on both sides. It takes too long for the zucchini to cook through in the hot oil so I have the oven preheated to 350 and I place the browned zucchini on a cookie sheet covered in foil and bake them uncovered for twenty minutes or so. Also if the zucchini has a lot of seeds in the middle I have cut out the seeds and made them zucchini rings. The bigger the zucchini the more seeds there will be.



Eat em HOT! And you have to dip them in your favorite Ranch. Mmm, Enjoy!

Diablo Dip

Now if you want a delicious dip that everyone will enjoy, this is it! It is super easy and not that expensive


Ingredients

1/2 package of taco seasoning mix

1 c. sour cream

1 container guacamole dip

1 c. shredded monterey jack cheese

1 c. cheddar cheese

1/2 green onions

1 c. diced fresh tomatoes

1 can of olives, chopped

Tortilla chips

Directions

Blend taco mix in with sour cream and refrigerate for at least an hour. In a small 9 x 9 pan layer the guacamole on the bottom. Top with sour cream mixture, spreading it slightly smaller than the guacamole. Sprinkle Monterey Jack and Cheddar cheese on the top. Next layer the olives, followed by the tomatoes and top with the green onion. Serve with chips.

Monsters aka German Pancakes


This is an oldie, but definitely a goodie!


Ingredients

1 c. flour

1 c. milk

6 eggs

1 stick of margarine or butter

a dash of salt

powder sugar

Directions

Heat oven to 425 degrees. Place a 9 x 13 pan on stove burner and turn it to a low heat. place margarine in pan and melt slowly. While you are waiting for the margarine to melt, mix all ingredients ( except for powder sugar) together with a hand mixer. Mix well make sure there are no clumps. When the margarine is done melting, remove from heat and add the mixture. Cook for 15 min. When it is done cooking top with powder sugar. Enjoy!
